Ingredients:
- 100g lemon meringue
- 1 cup raspberry coulis
- 1 cup chantilly cream
- 1 punnet of strawberries
Optional garnish: freeze dried
raspberry or mint leaves
Method:
Wash and thinly slice the strawberries.
Break the meringue up into rough pieces.
Assemble the Eton mess however you like, alternating between the chantilly cream, raspberry coulis, meringue and strawberries.
For an extra fancy finish, garnish with some fresh mint leaves and freeze dried raspberry.
